Red Bean Chili
Posted: February 28, 2009 Filed under: Cooking, Entrées 7 Comments »I learned recently that Hubby loves chili. I have only eaten it once in my life — just a few bites at a potluck last year — and I can’t even remember how it tasted. So I was searching for a “good,” simple chili recipe without exactly knowing the definiton of “good.” Luckily, I came across Smitten Kitchen’s post on a Red Bean Chili recipe adapted from Real Simple magazine. Kate raved about it as well, so I decided to give it a try.
It was fabulous. Hubby really liked the flavor, and I thought it was very good too (even though I’m not a huge chili fan in general). Best of all, it was super easy! Now I just need to find two things: a less expensive source of chili powder (because the 1/3 cup used almost my entire jar from McCormicks), and a great cornbread recipe to go along with the chili!

yay! i’ve never made chili but i’m super excited to make this. Rob loves chili but it’s not something I grew up with either. We’re going to make it tomorrow night – thank you for the heads up!
YUM!! That looks soooo good!
Before I forget, we tried this cornbread recipe last fall and liked it: http://allrecipes.com/Recipe/Grandmothers-Buttermilk-Cornbread/Detail.aspx.
Your chili looks great! I always think it’s interesting when I discover something I didn’t know about my husband. I just recently learned that he doesn’t like to drink water with dinner. We’ve been married 20+ years and he rarely has water with dinner, so how did I not figure that out?!
I’ve purchased large containers of chili powder at Sam’s and Kroger, if you have either of those stores near you.
Looks great! But my husband would require a side of rice with it. He is so Chinese sometimes.
Looks great!! If you can handle spicy… my boyfriend has been begging me to make this cornbread: http://dishingupdelights.blogspot.com/2008/07/i-love-this-cornbread-so-much.html
I’m not a spice fan, though, so I’m thinking about this one instead

Love your blog!
I have a great chili recipe that uses beef, chorizo, and ground pork – plus beer. It’s my favorite by far. Let me know if you’re interested and I’ll send it to you. And that gives me an idea for a blog post! Pioneer Woman Cooks (if you don’t read her cooking portion of her blog, I think you’d like it) has a great cornbread recipe. I’ll see if I can find it for you.
I’ll e-mail you a chili recipe I have — it’s “semi-homemade” – plus I have an easy corn bread recipe that’s really good too – and also semi-homemade”. Give me a couple days =)
